The hospitality industry has been shifting its focus and taking a more robust approach towards F&B sustainability. In face of environmental and social challenges exacerbated further by the pandemic, industry players are coming together to explore ideas, solutions and strategies of how to embed sustainability practices into all elements of their value chains and operations.

Recently she is focusing efforts on promotion of carbon neutrality projects with particular interests in foodtech and food waste reduction.

Roman is a hospitality professional and began his career at the age of 19. He has a passion to provide quality F&B services. Throughout his journey, Roman has worked under several prestigious international hotel brands including Mandarin Oriental and Swire Hotels Group in Hong Kong.

Committed to provide a personal hospitality experience, Roman decided to open Hemingway inspired experimental cocktail bar “THE OLD MAN” – HK together with his partners in 2017.

Roman now is one of the Co-founder of The Hong Kong most dynamic and upbringing beverages spot “PENICILLIN”, and it is Hong Kong’s first sustainable bar with closed loop model of production.

My Sustainability Goals for 2022:

Under the pandemic, it is a tough year for F&B industry in 2022 but I hope everyone will not forget our responsibility being part of the planet. We should remember that every tiny forces brought together will make a great impact. Therefore, we should do whatever we can do for our future generation, despite it can only reduce the use of straws or even a piece of paper, it would help a lot to keep up and the beauty and vibrant of this city.

She bridges her passion for smart design with an eagerness to explore innovative business solutions that are responsible, sustainable, and truly address climate change concerns.

My Sustainability Goals for 2022:

I would personally like to see concerns from the greater business community be heard and well supported by forthcoming government dialogue, which lead to impactful policies and infrastructure investment.
