Mystic Island Winery was designed to use gravity to move grapes and juice through different stages of production. By positioning key winemaking processes at different levels, we can reduce the need for pumps and other mechanical handling.
This approach offers two closely connected benefits.
First, it allows the fruit to be handled more gently. Excessive pumping can place pressure on grapes, skins and seeds, potentially affecting the flavours and textures extracted during winemaking. Gravity provides a more controlled way to transfer grapes and juice, helping our winemaking team preserve the quality and natural character of the fruit grown in Qiushan Valley.
Second, reducing unnecessary mechanical processes can lower energy use and simplify the movement of materials through the winery. The environmental benefit is therefore built into the production flow rather than added as a separate initiative.
Designing a gravity-fed winery requires careful planning from the outset. The building, equipment and winemaking process must work as one integrated system. This reflects our broader belief that sustainability is most effective when it informs the original design of a business.
